Kid Approved Turkey & Cheese Muffins (Grain free)

Recipe:
(Makes 12 muffins)
6 eggs
1/4 cup butter
1/2 cup buttermilk
2 tbls honey
1/2 cup coconut flour
1/4 tsp baking powder
1/4 tsp sea salt
1 cup cheddar cheese (shredded)
1 cup turkey (chopped into small squares)
Preheat oven to 350 degrees. Grease 12 muffin tins. Whisk eggs and mix in the (cooled) melted butter. Stir in buttermilk and honey. Next, Sift in coconut flour, baking powder & salt until blended. Add in the cheddar cheese and turkey and mix until combined. Fill the muffin tins about halfway. The batter will be thick. Bake for approximately 30 minutes or until the muffins are set and edges begin to become golden brown.
