I love buffalo sauce. Seriously, I could drink it out of the bottle. Just kidding about drinking it... or am I? Ha!
My two year old and my husband share my love for buffalo sauce so this recipe is a family favorite. This is an easy and simple meal that will please all buffalo sauce lovers. I have created a mouth watering masterpiece I tell ya!
1/4 cup red onion (minced)
1 clove garlic (minced)
1 tablespoon dry ranch
3 tbl chicken broth
1/4 to 1/2 cup feta cheese (up to you how much you would like, I like to use 1/2 cup)
2 tablespoons butter
1/2 cup buffalo wing sauce (I use Franks)
Preheat oven to 375 degrees. Mix onion, garlic, chicken broth and dry ranch seasoning together in a small bowl. Now pour the onion/garlic mixture over the chicken. Next in a small saucepan on medium heat, add butter. Once the butter is melted add in the buffalo sauce and stir. Allow mixture to combine and warm for a minute or so. Spread sauce over chicken and sprinkle feta on top. Bake until chicken is cooked through and juices run clear (about 45 minutes).
I like to serve this dish on a bed of spinach leaves. Enjoy!
