I want to share a tip that makes my life so much easier when it comes to making my menu plan: each day of the week is themed.
Monday is pancakes (or waffles) and prayer (this is our family rosary night).
Tuesday is grilling (thanks to my sweet husband)
Wednesday is a new recipe (although a couple of the recipes featured this recipe are new to me)
Thursday is Italian or Chinese or Mexican (or something that I am craving)
Friday is fish
Saturday is soup
Sunday is leftovers (aka mom's day off)
So here is a peak at what we will be having!
Blueberry and banana waffles (adapt it with almond or coconut flour), egg scramble with veggies and sausage
Pork chops with sweet potatoes and zucchini
Pesto chicken and squash (new to me) (my pesto will not be paleo) and steamed broccoli
Lasagna (new to me) (I will be using gluten free noodles instead of spaghetti squash because I forgot to buy squash) with a salad and green beans
Fish with asparagus and potatoes
man stew (my grandmas recipe) with side salad
